The fruit for our 2001 Reserve Cabernet Sauvignon was harvested from two vineyards in Niagara-on-the-lake. Fruit lots were vinified in small 800-kg batches using four different yeast strains, then pressed off with ~2 ºBrix remaining to finish primary ferment and undergo malolactic fermentation in barrel. Wines were aged in barrel for 22 months. Creekside’s Signature wines represent our best of the vintage as chosen through barrel-by-barrel tasting. Barrels chosen for 2001 were a combination of American and French oak from a variety of producers (50% new oak). 10% 2001 Cabernet Sauvignon added to the blend for additional tannic structure.
