Fruit for our 2004 reserve Cabernet Sauvignon was sourced entirely from a single vineyard on the St. David’s Bench. Fruit was hand-picked and vinified in small 800-kg batches, with traditional manual punchdown of the cap. Fermentation with three selected yeast strains was followed by a short post-ferment maceration, and a gentle press off skins into a mixture of French and American oak barriques. Malolactic fermentation was carried out in barrel. Aged in oak for 23 months. Of the 7 barrels that were chosen for the final blend, there were 8 French and four American, the final blend comprised 5 barrels of new oak. Best from 2009-2016.

Deep ruby colour; cigar box, cedar, red berry nose; elegant redcurrant and vanilla flavours; medium-bodied, petit château style, firm structure. A lovely wine.
