Rich Meat Sauce for Pasta

A rich, warming, comfort food sure to please.

Ingredients:

  • 3 tbsp Extra virgin olive oil
  • 3 Cooking onions, diced
  • 4 Cloves of garlic, smashed and diced
  • 2 Carrots, peeled and diced
  • 2 Cups Cremini/button mushrooms diced
  • 4 Celery Stalks diced
  • 6 oz Pancetta diced
  • 8 oz Ground Pork
  • 8 oz Ground Beef
  • 8 oz Ground Veal or Lamb
  • 2 Cups Creekside Shiraz or Cabernet Merlot
  • 2 Bay Leaves
  • 5 tbsp Tomato Paste
  • 1 Large Can Chopped Tomatoes
  • Salt and Pepper to taste
  • Freshly grated parmesan cheese

Directions:

Heat a large sauté pan at medium to high heat with olive oil. Add pancetta and fry until golden and aromatic, about 6 minutes, do not burn. Lower the temperature and add the onions, garlic, carrots, mushrooms and celery and sauté until it begins to caramelize. Add ground meats and stir vigorously to break apart. Stir in tomato paste, bay leaf, red wine, and stewed tomatoes and continue to stir, breaking up any remaining chunks of meat. Simmer for about 40 minutes, until the sauce has thickened and all the flavours have blended. Season with salt and pepper to taste. Serve overtop your favourite pasta, topped with parmesan cheese.
