Ripe apple aromatics, with some apricots thrown in for good measure, along with apple blossom and an edgy whiff of Niagara limestone. It’s a glass of tree fruit with a crisp, clean acidity that keeps the palate refreshed and balances the natural body that Chardonnay exudes.

Chardonnay was sourced from different spots in the Niagara Peninsula. Vinified separately in stainless steel tanks at cool temperature to preserve the delicate fruit aromatics of the variety. That’s it. We stepped out of the way and let the wine express its natural self. Bottled January 25, 2018.

Oak?! We don’t need no stinkin’ oak! We certainly love those big, luscious, barrel-fermented full-malolactic texture-bomb wines. But it is important to remember that noble Chardonnay doesn’t necessarily require all that window-dressing to shine, it does just fine butt-naked in its birthday suit. Ripe Niagara Chardonnay has plenty of intrinsic aromatics and natural mouth-filling texture. You just have to give it a chance and get out of the way. Save the barrels for another day…

The wine has enough complexity to hold up to your finest cooking, but simpler summer fare feels right: salads, pasta primavera, fresh Lake Erie perch. Mussels or steamed clams will be happy campers too, if you have access to good fresh seafood. Not to mention oysters…
