Harvested on October 2, 2015 from our Queenston Road Vineyard. Crushed to tank where it was cold soaked for 3 days before it was inoculated for fermentation. It was macerated on skins for 10 days and aged in older French oak barrels and demi-muids for 10 months before being racked and filtered for bottling. Bottled December 15, 2016.
2015 weather was surely a mixed bag in Niagara; what started as something resembling arctic weather in winter and early spring warmed up into a classic cool climate growing season. The vines enjoyed regular rainfall and average temperatures throughout summer and fall: with warm days, cool nights, good sunshine and periodic rain. Vine damage from the winter months decreased tonnage in some varieties, but lent good flavour concentration overall.
Smoked salmon, beet and goat cheese salad, Roast turkey with sage stuffing, grilled pork tenderloin, and braised lamb dishes.
