2016 will go down as one of the great years in Niagara for reds, but to be honest, it doesn’t really matter at the Serluca vineyard. Cabernet Franc from that vineyard is consistently ripe vintage-to-vintage, producing wines in a treasured medium-bodied style that is gaining recognition as one of the region’s signatures. The 2016 pick date is the earliest ever because of that hot growing season – we didn’t want to over-ripen the fruit and take it into another style.
Acid loves acid after all.... Make this Cabernet Franc sing by pairing it up with a traditional Tuscan-style Ribollita. Ribollita is a famous Tuscan bread and tomato soup, that typically includes leftover bread, cannellini beans, kale, cabbage, and inexpensive vegetables such as carrots, beans, chard, celery, potatoes and onion. This is hardly a leftover thought however, this version of Italian comfort food is sure to please even the ‘snobbiest’ of palates.
