We haven’t made a Gamay since forever (2001)! Why? Well, we don’t grow the variety on our own vineyards, and we just never came across any other sites that were worth pursuing. Until now, that is. Fruit was sourced from two vineyards in Niagara-on-the-Lake that both delivered the light-hearted cherry-berry goods that we love in Gamay.
Pork on your fork! Swine on your tines! Might we suggest glazing a Berkshire pork tenderloin with a sticky bourbon BBQ glaze, add a few forked Yukon Gold potatoes and Voila! You’ve got a match made in Gamay heaven. Looking for something less meaty? Why not opt’ for a hearty Butternut Squash bisque with a drizzle of dark maple syrup.
