2016 was a hot, dry vintage that gave us excellent concentration but required an earlier pick (Sept. 1st & 8th) to maintain that sharp acidity and elegance.
The Chardonnay and Pinot Noir were fermented separately and blended before tirage, after many trials, to make the style of sparkling we wanted. Full bodied, nervy acidity, structure, and autolytic complexity all wrapped in traditional method bubbles!This is our second disgorgement of 2016 The “Trad”. This elegant sparkler has matured on its lees for 6 more months, adding to it autolytic complexity.
- Nose
Elegantly lifted autolytic aromas on the nose with a nuance of aged chardonnay character.
- Mouth
The palate is front loaded with big mouthfeel while delicate fine bubbles pull tart tree fruit through to the mid-palate with clean bright citrus finish.
- Winemaking Notes
This batch went through a second tirage and stayed on lees for an extra 6 months.

Fresh shucked oysters, steamed mussels, soft and bloomy rind cheeses or harder cave aged cheeses with pickled things. And yes, actually potato chips or popcorn. No special occasion required.
