Beautiful, clean Chardonnay was hand harvested October 17, 2019. It was whole bunch pressed and once settled, racked to French oak barrels. Long and slow wild ferment with ambient yeasts in barrel, then full malolactic fermentation and aged on lees 12 months. Two barrels and a puncheon (1-2 year old French oak) were chosen for the final blend. 2019 was a
vintage that reflected great balance and freshness of this cool climate region.
Rich seafood, cream sauces, roasted chicken, popcorn.
