2019 was a cooler vintage in Niagara, making wines with elegance and finesse, but don’t think that means they're any less powerful and juicy. The Shiraz in this blend is very perfumed and peppery, while the Cabernet adds some weight and earthy savouriness. The grapes were harvested from two vineyards in the Niagara Peninsula. Fermented separately in small batches, the barrels for this blend were chosen individually after 18 months of ageing
Fermented in a stainless steel tank and then into barrel after pressing where it aged for 18 months. A combination of equal parts French and American oak. 15% new wood with the rest slightly older to let the fruit really shine.
