These grapes were carefully harvested from multiple premium vineyards across the Niagara Peninsula in November 2019. They were promptly crushed and underwent a 4-day cold soak before inoculating with yeast. The fermentation took place at warm temperatures in tanks, followed by 12 months of aging in barrels. RS: 6 g/L.
