The 2024 vintage started off with early bud break, with the season continuing to be nice and warm. The wines from this vintage show great intensity and concentration with a certain elegance and complexity. Each variety was fermented and aged separately in French oak barrels and puncheons. Trials were done to determine the perfect blend and balance between the two. Sauvignon Blanc brings the zesty, aromatic intensity and brightness while Semillon contributes softer, subtler nuances and a nice waxy texture. The perfect yin and yang.
Don’t be afraid of dishes with some interesting spice. Hearty salad with crispy, fried goat cheese rounds, chicken shawarma, lentil soup, fish en papillote, butter bean and zucchini stew or scallops with a sweet pea purée. Classic dishes like roasted chicken or turkey work great too.
