NEW RELEASE - 2024 Undercurrent Sparkling Shiraz
This isn’t your grandma’s bubbly. The 2024 Undercurrent Sparkling Shiraz is dark, juicy, and just the right amount of wild. Crafted from 100% Ontario Shiraz and fermented in stainless steel, this red sparkler brings serious flavour—and serious fun.
On the nose, it's all about rich black raspberry, blackberry, a dash of black pepper, and a whisper of beetroot and cured meats (trust us, it works). On the palate, expect a juicy wave of dark fruit, grape-jelly vibes, spice, and herbal notes like rosemary. It's off-dry, but the sweetness is perfectly balanced with bright acidity and fine bubbles—making this dangerously crushable.
Meant for bonfires, thunderstorms, and Halloween candy raids (officially endorsed by our assistant winemaker), it also pairs like a dream with grilled lamb, salami, hard cheeses, and spicy pastas.

The 2024 growing season was warm with great conditions. Early bud break fast-tracked the season making for a sooner than usual start to harvest. This wine was fermented for a shorter amount of time on skins to reduce tannins. Pressed early and put into a Charmat tank at the end of fermentation to capture bubbles from the natural sugars in the grapes and not contribute to more alcohol. Meant to be a fruity, fun red sparkling with some serious vibes along the way. Ferment was stopped to allow a slight bit of residual sugar to balance out the wine style.
Black pepper salami, grilled lamb chops, braised short ribs, hard cheeses, caponata, olive tapenade, grilled mushrooms and peppers, pasta puttenesca, and backyard grilled sausages.
